Recipe of the day!

I absolutely love Spring! I had my kids do a word splash (word association) with the seasons names and here's mine for SPRING:

warm, dresses, sandals, esparadilles, dresses, cool nights, longer days, sneezing, fresh fruits and vegetables, mangos, berries, pineapple, smoothies, smoothies, smoothies, birthday, dresses, dresses, long walks.... pollen, sneezing.....

It was fun to listen to the kids' lists. So many of them have allergies so their lists were something like: pollen, sneezing, sniffing, tank tops, pollen, pollen pollen....
*Poor babies*

Anywho.... my recipe for the day is inspired by the warm weather! I luv MANGOES (super exotic).

Sassy Mango Sorbet

1 ripe mango (peeled, and chopped)
1 cup of simple syrup (simmer equal amts of water and sugar until sugar disolves)
1/4 cup of cherry wine

Puree mango in blender or food processor
Add cooled simple syrup mixture and blend
add Cherry wine and pulse twice

Pour mixture into single serve ramekins (or any container you have) and pop into freezer. The mixture will be slushy in 2hours. Freeze longer for firmer sorbet!
